Calories from Cheese for South Pole Expedition

Many thanks to John Adamo at La Bottega for the best cheese going. To make freeze dried cheese with max calories and min water, we buy the best quality cheese,  grate it, freeze dry it, then vacuum seal it. During long expeditions, taste buds go a bit strange (anyone know why?) and we need stronger and stronger tasting foods, so we choose cheese like six-year old cheddar and mature Asiago. Can't wait to eat it on the trail!
